- For the Yogurt and Fruit Filling:

Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- In a large bowl, combine rolled oats, chopped nuts, cinnamon, and salt.
- Add melted coconut oil, honey or maple syrup, and vanilla extract to the dry ingredients. Mix thoroughly.
- Spoon the granola mixture into the muffin cups, pressing firmly into the bottom and up the sides to form cups.
- Bake for 12-15 minutes until golden brown.
- Cool completely in the muffin tin, then chill for 20-30 minutes for extra firmness.
- Carefully remove the granola cups from the tin.
- Fill each cup with Greek yogurt and top with fresh fruit just before serving.
