These no-bake Rice Krispie coconut bars are a delightful blend of crunchy cereal, toasted coconut, and sweet caramel, all topped with a layer of melted chocolate. They are quick to make and perfect for any occasion.

- 5 cups mini marshmallows
- 3 tablespoons butter
- 6 cups Rice Krispies cereal
- 14 oz bag sweetened shredded coconut
- 2 tablespoons milk
- 1 (13.4 oz) can dulce de leche
- 6 oz semisweet chocolate, melted
Instructions
- Toast the Coconut: In a large sauté pan, add the entire bag of shredded coconut. Cook over medium-high heat, stirring constantly until mostly golden brown (5-7 minutes). Remove from heat and stir for 2 more minutes as the pan cools.
- Prepare the Dulce de Leche Mixture: Set aside ½ cup of toasted coconut for topping. In a microwave-safe bowl, combine dulce de leche with milk. Microwave for 1 ½ minutes to soften and thin. Stir well.
- Mix Coconut with Caramel: Combine the dulce de leche mixture with the remaining toasted coconut, mixing until fully coated.
- Melt Marshmallows and Butter: In a large microwave-safe bowl, melt mini marshmallows and butter together for about 2 minutes, stirring halfway. Stir until smooth.
- Combine with Rice Krispies: Add Rice Krispies cereal to the melted marshmallow mixture. Stir until evenly coated.
- Layer the Mixture: Grease an 8×12-inch baking pan. Press half the cereal mixture into the bottom. Spread the coconut-caramel mixture on top. Add the remaining cereal mixture. Press everything down firmly and evenly with greased hands.
- Top with Chocolate: Melt semisweet chocolate in the microwave and pour it over the top layer. Sprinkle the reserved toasted coconut over the melted chocolate before it sets.
- Chill and Serve: Let the bars cool completely until the chocolate hardens. Slice into 12 equal squares and enjoy.
