- 2 medium Carrots, thinly sliced or julienned
- 1 cup Broccoli florets
- 1 cup Snap peas or snow peas
- 2 stalks Green onions, sliced
- 1 tbsp Toasted sesame seeds (optional)
- 1 tsp Red chili flakes (optional)
- 1/4 cup Fresh cilantro (optional)
Instructions
- Soak rice noodles in warm water for 8 minutes until tender, then drain and set aside. Alternatively, boil lo mein noodles per package instructions until al dente, then drain.
- In a medium bowl, whisk together soy sauce, sesame oil, minced garlic, and grated ginger until smooth and fragrant. This creates your savory sauce base.
- Heat 1 tablespoon of sesame or vegetable oil in a large nonstick skillet over medium-high heat until shimmering.
- Add the minced garlic and grated ginger to the hot skillet. Stir constantly for about 30 seconds until fragrant and lightly golden.
- Add the bell peppers, carrots, broccoli florets, and snap peas to the skillet. Stir-fry for 4-5 minutes until the vegetables are crisp-tender and their colors are vibrant.
- Add the prepared noodles and the sauce mixture to the skillet with the vegetables. Toss everything together for 1-2 minutes until all ingredients are evenly coated and heated through.
- Divide the veggie stir fry noodles among bowls. Garnish with sliced green onions, toasted sesame seeds, and red chili flakes if desired.
