Ingredients

  • 8 oz lo mein noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 cup sliced mushrooms
  • 1/2 cup sliced bell peppers (any color)
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 cup water or vegetable broth
  • Optional: red pepper flakes for spice

Instructions

  1. Cook lo mein noodles according to package directions. Drain and set aside.
  2. While noodles cook, prepare the sauce: whisk together soy sauce, oyster sauce, sesame oil, sugar, and water/broth in a small bowl.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
  5. Add broccoli florets and carrots, stir-fry for 2-3 minutes.
  6. Add snow peas, mushrooms, and bell peppers, stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  7. Add the cooked lo mein noodles and the prepared sauce to the skillet.
  8. Toss everything together until the noodles and vegetables are well coated with the sauce.
  9. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  10. If desired, add red pepper flakes for a spicy kick.
  11. Serve hot and enjoy your flavorful veggie mein bursts!
