Instructions
- Sauté the Aromatics: In a large skillet over medium heat, warm the olive oil. Add the chopped onion and garlic and cook until soft and fragrant, about 2–3 minutes.
- Brown the Beef: Add the ground beef to the skillet and cook until no longer pink, breaking it apart with a spatula. Drain excess fat if necessary.
- Season and Simmer: Sprinkle in the taco seasoning and stir well to coat the meat. Pour in the tomato sauce and let the mixture simmer for 5–7 minutes, allowing the flavors to deepen and thicken slightly.
- Assemble the Bowls: Spoon a generous helping of warm rice into each bowl. Top with the taco beef mixture, then add shredded lettuce, cherry tomatoes, onions, cheese, avocado, and any of your other favorite toppings.
- Garnish and Serve: Finish with a dollop of sour cream or Greek yogurt, fresh cilantro, and a squeeze of lime juice.
