Description

A hearty and nutritious one-pan breakfast or brunch dish featuring tender sweet potatoes, wilted kale, and savory aromatics, often topped with a perfectly cooked egg.


Ingredients

  • 2 tablespoons Olive Oil
  • 1 large Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 2 large Sweet Potatoes (about 1.5 lbs), washed and cut into a ½-inch dice
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Cumin
  • ¼ teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste
  • 1 bunch Lacinato or Curly Kale, stems removed and leaves roughly chopped
  • 1 cup cooked Ham, diced (optional)
  • 4–6 large Eggs
  • Optional garnishes: Fresh parsley, chopped scallions, or avocado

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for 4-5 minutes until softened.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add diced sweet potatoes to the skillet, spreading them in an even layer. Cook undisturbed for 5-7 minutes to develop a crust.
  4. Sprinkle sweet potatoes with smoked paprika, cumin, red pepper flakes (if using), salt, and pepper. Stir to coat.
  5. Continue cooking for 10-15 minutes, stirring every 3-4 minutes, until potatoes are tender and browned.
  6. If using ham, add it to the skillet and cook for 2-3 minutes to heat through.
  7. Add chopped kale to the skillet. Stir and cook for 3-5 minutes until wilted and tender.
  8. Create wells in the hash mixture and crack an egg into each. Cover the skillet and cook over medium-low heat for 4-6 minutes, until egg whites are set and yolks are runny.
  9. Serve the sweet potato kale hash immediately, topped with the eggs and optional garnishes.

  • Ensure sweet potatoes are diced uniformly for even cooking.
  • Do not crowd the pan when cooking sweet potatoes to achieve a crispy texture.
