- 12 oz shell pasta
- 1 lb sirloin steak, cut into bite-sized cubes
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ tsp black pepper
- Salt, to taste
- Fresh chopped parsley (for garnish)
Instructions
- Cook the shell pasta according to package directions until al dente. Drain and reserve ¼ cup of pasta water.
- Pat steak dry, season with salt and pepper. Heat 1 tbsp butter in a skillet over medium-high heat. Sear steak bites for 2-3 minutes per side until browned. Remove and set aside.
- Reduce skillet heat to medium, add remaining 2 tbsp butter. Sauté minced garlic until fragrant, about 1 minute.
- Pour in heavy cream, bring to a simmer. Whisk in Parmesan cheese and black pepper until smooth. Thicken slightly, adding reserved pasta water if needed.
- Add cooked pasta to the skillet, toss to coat in sauce. Gently fold in steak bites and any accumulated juices.
- Garnish with fresh parsley and extra Parmesan if desired. Serve hot.

- Shell pasta is ideal as it holds the sauce well, but penne or rotini can be substituted.
- Sautéed mushrooms or baby spinach can be added for extra vegetables.
- Use freshly grated Parmesan for a smoother sauce.
