  • 1 tablespoon olive oil
  • 2 pounds shrimp, peeled, deveined, tails removed
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup non-fat Greek yogurt
  • ½ cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 12 ounces coleslaw mix (red & green cabbage, carrots)
  • Fresh cilantro, chopped, to taste
  • Jalapeño, sliced, to taste
  • ½ cup feta or cotija cheese, crumbled
  • 8 gluten-free tortillas

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss to coat. Cook for 2-3 minutes, stirring occasionally, until shrimp are pink and curled. Remove from heat and set aside.
  2. In a bowl, whisk together Greek yogurt, mayonnaise, lime juice, maple syrup (or honey), paprika, chili powder, garlic powder, and salt until smooth.
  3. In a large bowl, toss the coleslaw mix with half of the creamy cilantro lime sauce until evenly coated.
  4. Warm the gluten-free tortillas in a skillet or microwave.
  5. Assemble the tacos: place a generous amount of the coated coleslaw on each tortilla, top with 4-5 shrimp, drizzle with the remaining sauce, and sprinkle with chopped cilantro, sliced jalapeños, and crumbled cheese.
  6. Serve immediately.
