  • 2 cups bell peppers, mixed colors
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced

  • 2 cloves garlic, freshly minced
  • 1 tablespoon ginger root, grated
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons chopped green onions (optional garnish)
  • 1 tablespoon toasted sesame seeds (optional garnish)
  • 1/2 teaspoon red pepper flakes (optional garnish)

Instructions

  1. Prepare the stir fry ingredients: Pat the peeled shrimp dry. Trim the broccoli florets and slice the bell peppers and carrots into thin strips.
  2. Make the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and cornstarch until smooth.
  3. Sear the shrimp: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, until pink and just opaque. Remove the shrimp from the wok and set aside.
  4. Stir-fry the vegetables: Add another drizzle of oil to the wok. Add the minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant. Add the prepared vegetables (broccoli, bell peppers, carrots, and snow peas) and stir-fry for 3-4 minutes until they are tender-crisp.
  5. Combine and thicken: Return the cooked shrimp to the wok with the vegetables. Pour the prepared sauce over the ingredients. Stir continuously for 1-2 minutes until the sauce becomes glossy and thickens, coating everything nicely.
  6. Serve: Transfer the Shrimp Stir Fry to serving plates. Garnish with chopped green onions, toasted sesame seeds, and red pepper flakes if desired. Serve immediately, optionally over steamed jasmine rice or cauliflower rice.
