Description

This Savory Ground Beef and Brussels Sprouts Stir-Fry is a quick, healthy, and delicious 25-minute weeknight dinner. It features seasoned ground beef, caramelized Brussels sprouts, and a sweet chili-lime sauce for a flavorful meal.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup sweet chili sauce
  • Juice of 1/2 lime
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large skillet, crumble the ground beef and cook over medium-high heat. Add the sliced green onions and season with garlic powder, kosher salt, black pepper, soy sauce, and sriracha (if using). Continue to cook until the beef is fully browned. Once done, transfer the cooked beef mixture onto a plate and set it aside.
  2. In the same skillet, add the avocado oil and heat over medium. Add the shredded Brussels sprouts and season with salt and pepper. Sauté the sprouts until they are tender and caramelized, about 5-7 minutes.
  3. Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and fresh lime juice. Stir everything together until well coated and heated through.
  4. Optional: Garnish with sesame seeds before serving. Serve the stir-fry over rice or any other preferred base.

Notes

  • This dish is versatile and can be served over rice, quinoa, or cauliflower rice.
  • For a spicier version, increase the sriracha or add chili flakes.
  • Ground turkey, chicken, or tofu can be substituted for ground beef.
  • Add other vegetables like shredded carrots, bell peppers, or snap peas for extra color and crunch.
  • Ensure Brussels sprouts are shredded thinly for quick cooking.
  • For a gluten-free option, use tamari or coconut aminos instead of soy sauce.
