- 1 small Red Onion, finely chopped

- 1 cup Pumpkin Purée (canned, not pie filling)
- 1 (15-ounce) can Black Beans, rinsed and drained
- 1 cup Frozen or Canned Corn, drained
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/4 tsp Smoked Paprika
- Salt and Black Pepper to taste
- 8 large (10-inch) Flour or Whole Wheat Tortillas
- 2 cups Shredded Monterey Jack or Cheddar Cheese
- 2 tbsp Butter or additional Olive Oil
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the finely chopped red onion for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- Add pumpkin purée, rinsed black beans, and corn to the skillet. Stir to combine.
- Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the mixture. Stir well and cook for 3-5 minutes, allowing flavors to meld and the filling to heat through. Remove from heat.
- Lay a tortilla flat. Sprinkle ¼ cup cheese over half of the tortilla. Spoon about ½ cup of the pumpkin and veggie filling over the cheese. Sprinkle another ¼ cup cheese on top.
- Fold the tortilla in half to create a half-moon shape. Repeat for remaining tortillas.
- Wipe the skillet and melt ½ tablespoon of butter or heat olive oil over medium heat. Place 1-2 quesadillas in the pan.
- Cook for 3-4 minutes per side until golden-brown, crispy, and cheese is melted.
- Transfer to a cutting board, let rest, then slice into wedges and serve hot.
