Ingredients

  • 100 g (3.5 oz) dark chocolate, chopped
  • 100 g (3.5 oz) unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 80 g (⅔ cup) granulated sugar
  • 30 g (¼ cup) all-purpose flour
  • 40 g (¼ cup) shelled pistachios, finely ground
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra butter and cocoa powder for greasing ramekins
  • Optional: extra chopped pistachios for garnish, powdered sugar for dusting

Instructions

  1. Butter the inside of 4 small ramekins generously, then dust with cocoa powder to prevent sticking.
  2. In a heatproof bowl set over simmering water, melt the dark chocolate and butter until smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Gently fold the melted chocolate mixture into the eggs. Add vanilla, salt, flour, and finely ground pistachios. Stir just until combined.
  5. Divide the batter evenly among the prepared ramekins.
  6. Preheat oven to 200°C (390°F).
  7. Bake the pistachio lava cakes for 10–12 minutes, until the edges are set but the centers are still soft.
  8. Let cakes cool for 1 minute, then run a knife around the edges and invert onto plates.
  9. Garnish with chopped pistachios, powdered sugar, or vanilla ice cream.
