Ingredients

  • 1 lb Chicken breast strips
  • 3 Bell peppers (red, yellow, green)
  • 1 Yellow onion
  • 2 cloves Garlic, minced
  • 2 tbsp Chili powder
  • 1 tbsp Ground cumin
  • 1 tbsp Paprika
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 lime, juiced
  • 0.25 cup Fresh cilantro, chopped
  • 8 Warm flour or corn tortillas
  • Sour cream or guacamole, for topping

Instructions

  1. In a bowl, toss chicken strips with chili powder, cumin, paprika, oregano, salt, pepper, and garlic. Let rest for at least 10 minutes.
  2. Warm a large skillet over medium-high heat and swirl in olive oil. Once shimmering, add chicken in a single layer. Sear 3–4 minutes per side until golden brown.
  3. Push chicken to one side, then add sliced bell peppers and onions. Stir occasionally, cooking until peppers are tender-crisp and onions turn translucent, about 5 minutes.
  4. Lower heat to medium, then squeeze fresh lime juice over chicken and veggies. Toss for one minute until everything is glossy and aromatic.
  5. Load hot tortillas with chicken and peppers straight from the pan. Garnish with cilantro, sour cream or guacamole, and extra lime wedges.
