Description

  • 1 pound boneless skinless chicken breast, diced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup long grain white rice
  • 1 ½ cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • Juice of 1 lime
  • Chopped fresh cilantro (for garnish)
  • Optional toppings: Diced avocado, Sour cream or Greek yogurt, Salsa, Sliced jalapeños, Extra shredded cheese

Instructions

  1. In a large, deep skillet, heat olive oil over medium-high heat. Add the diced chicken and sprinkle with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for 5–6 minutes, stirring occasionally, until the chicken is golden and cooked through.
  2. Pour in the uncooked rice and stir to coat it in the seasoned oil and chicken juices. Add the chicken broth, beans, corn, and diced tomatoes with green chilies. Stir gently to combine.
  3. Bring the mixture to a boil, then reduce heat to low. Cover the pan and let everything simmer for about 18–20 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  4. Remove the lid and sprinkle the shredded cheddar cheese evenly over the top. Let it melt for 2–3 minutes with the heat off. Squeeze lime juice over the dish and top with chopped cilantro.
  5. Scoop into individual bowls and add your favorite toppings like avocado, sour cream, salsa, or extra cheese.

Notes

  • This dish is easily adaptable. Add bell peppers or zucchini during the cooking process for more veggies.
  • You can use brown rice, but increase the cooking time and liquid slightly.
