- 1 teaspoon paprika

- 2 eggs
- 1/2 cup milk
- Oil, for frying
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 1/2 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried parsley
- Salt, to taste
- Black pepper, to taste
- Optional: squeeze of lemon juice
Instructions
- Peel the outer skin off the small sweet onions. Slice off the root just enough to allow them to stand flat, keeping the core intact. Make four vertical cuts, evenly spaced, stopping about 1/4 inch from the base. Make four more cuts in between those. Gently separate the petals to form a “bloom.”
- Place the cut onions in a bowl of ice water for about 30 minutes to help the petals open.
- In one bowl, whisk together the eggs and milk. In another, mix the flour, paprika, garlic powder, onion powder, cayenne (if using), salt, and pepper.
- Remove the onions from the water and gently pat dry. Dip each onion into the flour mixture, ensuring all crevices are coated. Then dip into the egg mixture, followed by a second coating of flour for these mini crispy blooming onions.
- Heat oil in a deep saucepan to 350°F (175°C). Carefully lower each onion, one at a time, into the hot oil. Fry until golden brown and crispy, about 3–4 minutes per onion. Remove with a slotted spoon and place on a paper towel-lined tray to drain excess oil.
- While the mini crispy blooming onions cool slightly, whisk together mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, dried parsley, salt, and black pepper for the buttermilk ranch dip. Adjust seasoning to taste, and chill until ready to serve.
