Description

Ingredients

  • 7 oz (200g) cream cheese
  • 4 tbsp milk
  • 3 tbsp unsalted butter
  • 1 tbsp matcha green tea powder
  • 3 eggs (separated)
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (30g) cake flour
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions

  1. In a heatproof bowl over simmering water, melt the cream cheese, milk, and butter. Stir until smooth. Remove from heat and sift in the matcha powder. Stir until dissolved.
  2. Sift in the cake flour and cornstarch. Stir until smooth. Let cool, then add egg yolks one at a time, mixing thoroughly. Stir in lemon juice.
  3. In a clean bowl, whip egg whites until foamy. Gradually add sugar until stiff peaks form. Fold the whipped egg whites into the matcha batter in three parts using a spatula.
  4. Line a 6-inch round cake pan with parchment paper. Wrap the outside of the pan tightly with foil.
  5. Pour the batter into the prepared pan. Tap the pan to release air bubbles. Place the pan in a larger baking tray filled with hot water. Bake at 320°F (160°C) for 25 minutes, then reduce to 280°F (140°C) for another 35 minutes.
  6. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 15 minutes. Remove, cool, then chill in the fridge for at least 4 hours or overnight.
