- 2 tablespoons za’atar seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (or Aleppo flakes, optional)
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar seasoning, salt, pepper, and red pepper flakes until well combined.
- Place the chicken thighs into a large plastic food storage bag or a container with a lid.
- Pour the marinade over the chicken, ensuring it’s well-coated.
- Seal the bag or cover the container and refrigerate for at least 30 minutes, or up to overnight for more flavor.
- Lightly grease a baking dish with cooking spray or olive oil.
- Remove the chicken from the marinade, shaking off any excess, and arrange the pieces in a single layer in the baking dish.
- Bake the chicken uncovered for 45 minutes or until it is golden brown and the internal temperature reaches 165°F (74°C).
- Garnish with chopped fresh parsley before serving.
- Serve with couscous and warm pita to enjoy the flavorful juices.
