  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 cup cream cheese frosting
  • 1/4 cup chocolate shavings (or cocoa dusting)

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9-inch cake pan with butter, then dust with flour.
  2. Sift dry ingredients: whisk together flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. Cream butter & sugars in a stand mixer or bowl until light, fluffy, and pale, about 3 minutes.
  4. Add eggs & vanilla one at a time, beating well after each addition.
  5. Alternate dry and wet ingredients, mixing just until combined.
  6. Fold in soaked dried fruits and chopped nuts into the batter until evenly distributed.
  7. Bake cake on the center rack for 35–40 minutes or until a toothpick comes out with a few moist crumbs.
  8. Cool cake in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  9. Beat frosting ingredients together until smooth and spreadable.
  10. Frost the cooled cake and garnish with chocolate shavings or cocoa.
