  • 2 – 3 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, and poppy seeds.
  3. In a large mixing bowl, beat the butter and sugar until pale and fluffy.
  4. Beat in the eggs one at a time, then stir in lemon zest, lemon juice, and vanilla extract.
  5. Mix in the Greek yogurt (or sour cream).
  6. Add the dry ingredients to the wet ingredients in two batches, stirring just until combined.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  10. Whisk together powdered sugar and lemon juice for the glaze, then drizzle over the cooled cake.
