  • 1 teaspoon vanilla extract
  • 1/2 cup chopped crystallized ginger
  • 1/2 cup chopped nuts (like pecans or walnuts)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, ginger, cinnamon, baking powder, baking soda, and salt until uniform.
  3. In another bowl, beat eggs with milk, vegetable oil, brown sugar, and vanilla extract until pale golden.
  4. Pour wet ingredients into dry, gently stir until just combined, retaining lumps for tenderness.
  5. Scoop batter into each liner, filling two-thirds full to allow for rising.
  6. Sprinkle chopped crystallized ginger and nuts over muffins just before baking.
  7. Bake for 18–22 minutes until tops are golden brown and a toothpick comes out clean.
  8. Let muffins rest in the tin for 5 minutes, then transfer to a wire rack to cool.
