Description

Crispy Shrimp Sushi Bites are a fun, bite-sized twist on traditional sushi, featuring oven-baked crispy shrimp, sushi rice, avocado, and a spicy mayo drizzle.


Ingredients

  • 3 sheets nori, cut into 4 squares each
  • 1½ cups cooked sushi rice, cooled
  • 1 lb shrimp, peeled and deveined, cut into bite-sized cubes
  • 1 tablespoon tapioca starch
  • 2 tablespoons sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey
  • 2 scallions, diced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • Salt, to taste
  • ¼ cup mayonnaise
  • 2 teaspoons sriracha sauce
  • 1 teaspoon honey
  • ½ avocado, diced
  • 1 tablespoon black sesame seeds
  • 2 tablespoons chives, chopped

Instructions

  1. Preheat oven to 400°F. Cut each nori sheet into four equal squares.
  2. Cut shrimp into small cubes and lightly coat with tapioca starch.
  3. In a medium bowl, combine sesame oil, soy sauce, honey, scallions, garlic powder, onion powder, paprika, chili powder, oregano, and salt. Toss shrimp to coat.
  4. Place one nori square into each muffin tin slot. Add 1 heaping tablespoon of sushi rice to the center of each nori square. Press gently to shape, allowing nori edges to come up the sides.
  5. Bake the muffin tin for 5 minutes to warm and set the rice.
  6. Top each rice-filled nori square with 5-6 pieces of the seasoned shrimp.
  7. Return the muffin tin to the oven and bake for an additional 10 minutes, or until shrimp is cooked through and crispy.
  8. Allow sushi bites to cool slightly. Top each with diced avocado, spicy mayo, black sesame seeds, and chopped chives.

Notes

  • Using cooled sushi rice makes it easier to shape and prevents sticking.
  • Do not overcrowd the muffin tin to ensure even baking.
  • Adjust sriracha in the spicy mayo to your preferred heat level.
  • Ingredients like chicken or tofu can be substituted for shrimp.
  • This recipe is gluten-free if tamari or gluten-free soy sauce is used.
