Description

A warm, creamy oatmeal recipe featuring a nutty caramel flavor and topped with tender, spiced apples. This dish is vegan, gluten-free, and ready in just 15 minutes, offering a comforting yet nutritious breakfast.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup plant-based milk
  • 1 cup water
  • 1/4 cup peanut butter caramel
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 medium apple, diced
  • 1 tsp coconut oil
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp ground nutmeg

Instructions

  1. Combine rolled oats, plant-based milk, water, peanut butter caramel, vanilla extract, 1/2 tsp ground cinnamon, and salt in a medium pot.
  2. Cook over medium heat for 6-8 minutes, stirring occasionally, until the mixture thickens and becomes creamy.
  3. While the oatmeal cooks, heat a skillet over medium-low heat and lightly grease with coconut oil.
  4. Add the diced apple, 1/2 tsp ground cinnamon, ginger, and nutmeg to the skillet.
  5. Stir occasionally and cook for 3-5 minutes until the apples are softened and warm.
  6. Serve the creamy oatmeal in bowls, topped with the warm spiced apples. Drizzle with extra peanut butter caramel and add desired toppings.

Notes

  • Use certified gluten-free rolled oats if needed.
  • Oat milk provides extra creaminess, almond milk adds a nutty note, and soy milk offers protein.
  • Prep apples in advance and store in the refrigerator for quick reheating.
  • Oatmeal can be stored in the refrigerator for up to 3 days; reheat with a splash of plant-based milk.
  • Steel-cut oats can be used but will require a longer cooking time (20-25 minutes) and potentially more liquid.
