- 1 medium Ripe avocado
- 1 tablespoon Fresh lemon juice

- Chili flakes or herbs (optional)
Instructions
- Lightly brush sourdough slices with olive oil, then toast at 375°F (190°C) for 4–5 minutes until golden brown and crisp.
- In a bowl, combine ripe avocado, fresh lemon juice, salt, and pepper. Mash until creamy but still slightly chunky.
- Heat butter or oil in a skillet over medium-low heat. Crack in eggs and cook sunny-side up until whites are set, about 3 minutes.
- Spread avocado mixture evenly on warm toast, top with the egg, and finish with chili flakes or herbs for extra flavor.
Notes
- Add a sprinkle of flaky sea salt for extra crunch.
