Description

Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1 tablespoon instant espresso powder
  • 1 1/2 teaspoons unflavored gelatin powder
  • 2 tablespoons cold water
  • Optional: whipped cream or chocolate shavings for garnish

Instructions

  1. Bloom the gelatin: Sprinkle gelatin over cold water in a small bowl. Let sit for 5-10 minutes until softened.
  2. Heat the cream mixture: In a saucepan, combine heavy cream, milk, sugar, and espresso powder. Heat over medium heat, whisking, until hot and steaming but not boiling.
  3. Add gelatin: Remove from heat. Add bloomed gelatin and stir until fully dissolved and smooth.
  4. Pour and chill: Divide the mixture among 4 ramekins or glasses. Let cool slightly, then refrigerate for at least 4 hours, or until set.
  5. Serve and garnish: If unmolding, dip ramekins in warm water briefly. Serve in glasses or unmolded. Garnish with whipped cream or chocolate shavings if desired.
