- 1 cup whole milk
- 1/4 cup granulated sugar
- 1 tablespoon instant espresso powder
- 1 1/2 teaspoons unflavored gelatin powder
- 2 tablespoons cold water
- Optional: whipped cream or chocolate shavings for garnish
Instructions
- Bloom the gelatin: Sprinkle gelatin over cold water in a small bowl. Let sit for 5-10 minutes until softened.
- Heat the cream mixture: In a saucepan, combine heavy cream, milk, sugar, and espresso powder. Heat over medium heat, whisking, until hot and steaming but not boiling.
- Add gelatin: Remove from heat. Add bloomed gelatin and stir until fully dissolved and smooth.
- Pour and chill: Divide the mixture among 4 ramekins or glasses. Let cool slightly, then refrigerate for at least 4 hours, or until set.
- Serve and garnish: If unmolding, dip ramekins in warm water briefly. Serve in glasses or unmolded. Garnish with whipped cream or chocolate shavings if desired.

- For a dairy-free version, use full-fat coconut milk instead of dairy milk and cream.
- Adjust the amount of espresso powder to your taste for a stronger or milder coffee flavor.
