  • 1 lb fresh strawberries, large and ripe
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips (or your preferred chocolate)
  • 1 tsp coconut oil or vegetable shortening (optional, for smoother chocolate)
  • Crushed graham crackers (optional, for garnish)

Instructions

  1. Wash the strawberries gently and pat them completely dry. Use a small paring knife to remove the green tops and create a small cavity in each strawberry.
  2. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Transfer the cheesecake filling into a piping bag fitted with a small tip.
  4. Pipe the cheesecake filling into the hollowed strawberries until they’re just full.
  5. Place the filled strawberries on a baking sheet lined with parchment paper.
  6. Melt the chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring between each, until smooth. Add coconut oil if desired.
  7. Hold each filled strawberry by the stem or use a fork to dip it into the melted chocolate, covering it fully or halfway.
  8. Place the dipped strawberries back on the parchment paper.
  9. If desired, sprinkle crushed graham crackers over the chocolate before it sets.
  10. Refrigerate for at least 20 minutes, or until the chocolate is firm.
