- 1 teaspoon grated fresh ginger

- 1 teaspoon ground coriander

- 1/4 teaspoon cayenne pepper (or to taste)
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup fresh spinach, roughly chopped
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1/4 cup all-purpose flour
- Vegetable oil for frying
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Stir in cumin, coriander, turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly.
- Add the drained chickpeas to the skillet. Mash about half of the chickpeas with a fork or potato masher.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and stir in cilantro and lemon juice. Season with salt and pepper. Let the mixture cool slightly.
- In a shallow dish, place the flour. In another shallow dish, place the beaten egg. In a third shallow dish, place the breadcrumbs.
- Once the chickpea spinach curry mixture is cool enough to handle, form it into small balls or bite-sized portions.
- Roll each ball first in the flour, then dip in the beaten egg, and finally coat with breadcrumbs.
- Heat about 1 inch of vegetable oil in a deep skillet or pot to 350°F (175°C).
- Carefully fry the chickpea spinach curry bursts in batches until golden brown and heated through, about 3-4 minutes.
- Remove with a slotted spoon and drain on paper towels. Serve hot.
Notes
- For a spicier kick, increase the cayenne pepper.
- You can bake these instead of frying for a healthier option. Bake at 400°F (200°C) for 15-20 minutes, flipping halfway through.
