Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin with butter or non-stick spray.
- Whisk eggs in a large bowl until yolks and whites are fully combined.
- Pour milk, season with salt and pepper, then stir until the mixture is smooth.
- Fold in ham, shredded cheese, and optional veggies carefully.
- Divide mixture among muffin cups, filling each about three-quarters full.
- Bake for 20–22 minutes, until edges are set and tops are lightly golden brown.
- Cool for 5 minutes in the tin before transferring muffins to a wire rack.
