  • 2 cups cooked chicken, chopped
  • 2 cups broccoli florets (fresh or frozen)
  • 1 clove garlic, minced
  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1½ cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups shredded cheddar cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped chicken and minced garlic, and sauté for 2–3 minutes until warmed through and fragrant.
  2. Add the broccoli florets and the cheese tortellini directly into the pan.
  3. Stir in the chicken broth and heavy cream. Add onion powder, salt, and pepper. Stir gently to coat everything.
  4. Bring the mixture to a light simmer. Cover the skillet and let it cook for 8–10 minutes, stirring occasionally, until the tortellini are tender and the broccoli is cooked.
  5. Reduce heat to low. Stir in the shredded cheddar and Parmesan cheese until melted into a smooth, creamy sauce.
  6. Serve immediately.

Notes

  • For extra flavor, add a dash of mustard powder or a spoonful of cream cheese to enrich the sauce.
  • You can also sprinkle the top with breadcrumbs and broil for 2–3 minutes for a crispy finish.
  • No Broccoli? Substitute with peas, spinach, or zucchini.
