- 2 cups Fresh spinach (Use baby spinach for tender leaves.)
- 1 cup Shredded cheese (A mix of cheddar and mozzarella.)
- 4 oz Cream cheese (Adds richness and helps bind the filling.)
- 1 clove Minced garlic (Enhances flavor.)
- 1 pinch Salt
- 1 pinch Pepper
- 4 pcs Flour tortillas (Medium-sized, soft tortillas.)
- 1 tbsp Butter or olive oil (For greasing the pan.)
Instructions
- Warm oil and garlic in a skillet over medium heat. Add spinach and cook 2 minutes, stirring until wilted and vibrant green.
- Stir in cream cheese, shredded cheddar, and mozzarella. Season with salt and pepper, cooking 1 minute until fully melted and creamy.
- Place a flour tortilla in a clean, dry skillet over medium-low heat. Warm 30 seconds per side until pliable and lightly toasted.
- Spoon the spinach–cheese filling onto one half of the tortilla. Fold the other side over and press gently to seal.
- Add a touch of butter or oil around the edges. Cook 2–3 minutes per side until golden and cheese bubbles.
- Transfer to a cutting board, let rest 1 minute, then slice into wedges. Serve warm.
