- 1/2 teaspoon salt
- 1/3 cup olive oil or neutral vegetable oil
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/3 cup sour cream or Greek yogurt
- 1 1/3 cups finely shredded carrots
- 1/2 cup crushed pineapple, well drained
- 1/2 cup shredded coconut
- Salted Caramel Glaze
- 1/2 cup light brown sugar
- 1/3 cup heavy cream
- 4 tablespoons unsalted butter
- 1/2 teaspoon salt
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 400°F and line a muffin pan.
- Prepare streusel and chill.
- Whisk dry ingredients.
- Mix wet ingredients until smooth.
- Combine wet and dry gently.
- Fold in carrots, pineapple, and coconut.
- Rest batter if time allows.
- Fill muffin cups and top with streusel.
- Bake, reducing temperature halfway.
- Cool before glazing.
- Cook caramel glaze.
- Whisk in sugar and vanilla.
- Drizzle glaze and let set.
