- 3 cups peeled, chopped apples (about 4 medium apples)
- 1 tablespoon lemon juice
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 4 tablespoons unsalted butter
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- ½ teaspoon vanilla extract
- ¼ cup water
Instructions
- Peel, core, and finely chop apples. Toss with lemon juice in a bowl to prevent browning.
- In a medium saucepan, combine apples, water, and both sugars. Bring to a simmer over medium heat and cook for 10–15 minutes, stirring occasionally, until apples soften and release juices.
- Add butter, cinnamon, sea salt, and vanilla extract. Stir until butter melts and mixture is glossy. Continue cooking and stirring often.
- Reduce heat to low and simmer for 20–30 minutes, stirring frequently, until jam thickens. Mash slightly or use an immersion blender for a smoother texture if desired.
- Test for doneness by spooning a bit onto a cold plate; it should wrinkle when pushed. Simmer a few minutes more if needed.
- Remove from heat and ladle into sterilized jars. Store in the refrigerator for up to 3 weeks or process in a water bath for shelf-stable jars.
Notes
- This caramel apple jam thickens naturally without added pectin.
- Store opened jars in the refrigerator and use within 3 weeks.
- Firm, tart apples like Granny Smith or Honeycrisp are recommended.
- For extra spice, add a pinch of nutmeg or cloves.
