Ingredients

  • 3 cups peeled, chopped apples (about 4 medium apples)
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 4 tablespoons unsalted butter
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla extract
  • ¼ cup water

Instructions

  1. Peel, core, and finely chop apples. Toss with lemon juice in a bowl to prevent browning.
  2. In a medium saucepan, combine apples, water, and both sugars. Bring to a simmer over medium heat and cook for 10–15 minutes, stirring occasionally, until apples soften and release juices.
  3. Add butter, cinnamon, sea salt, and vanilla extract. Stir until butter melts and mixture is glossy. Continue cooking and stirring often.
  4. Reduce heat to low and simmer for 20–30 minutes, stirring frequently, until jam thickens. Mash slightly or use an immersion blender for a smoother texture if desired.
  5. Test for doneness by spooning a bit onto a cold plate; it should wrinkle when pushed. Simmer a few minutes more if needed.
  6. Remove from heat and ladle into sterilized jars. Store in the refrigerator for up to 3 weeks or process in a water bath for shelf-stable jars.
