- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves, for garnish
- 2 tablespoons balsamic glaze (or more to taste)
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry and rub them with olive oil. Season with Italian seasoning, garlic powder, salt, and pepper.
- Optional: Sear chicken breasts in an oven-safe skillet for 2 minutes per side over medium-high heat.
- Place chicken in a baking dish or oven-safe skillet. Bake uncovered for 20–25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove chicken from the oven. Top each piece with halved cherry tomatoes and mozzarella slices.
- Turn on the broiler. Broil for 2–3 minutes until cheese is melted and bubbly.
- Top with fresh basil leaves and drizzle with balsamic glaze. Serve warm.
