Description

This Apple Crumble Chia Pudding recipe combines the comforting flavors of apple pie with a healthy breakfast. It features a creamy chia pudding base, a warm cinnamon apple layer, and a crunchy oat crumble topping. It’s perfect for meal prep and a satisfying, wholesome meal.

Ingredients

Scale
  • For the Chia Pudding:
  • 1 cup unsweetened almond milk
  • 3 tablespoons chia seeds
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • For the Apple Layer:
  • 1 apple, peeled and diced
  • ½ teaspoon cinnamon
  • 1 teaspoon coconut oil
  • 1 teaspoon maple syrup
  • For the Crumble Topping:
  • 2 tablespoons rolled oats
  • 1 tablespoon almond flour
  • 1 teaspoon coconut oil
  • ½ teaspoon cinnamon
  • 1 teaspoon maple syrup

Instructions

  1. Prepare the Chia Pudding: In a medium bowl or mason jar, whisk together almond milk, chia seeds, maple syrup, and vanilla extract. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thick.
  2. Make the Warm Apple Filling: In a small skillet over medium heat, add coconut oil and diced apples. Sprinkle with cinnamon and cook until apples soften. Add maple syrup and cook for another 2-3 minutes until lightly caramelized. Remove from heat and cool.
  3. Make the Crumble Topping: In a small bowl, mix oats, almond flour, cinnamon, maple syrup, and coconut oil until crumbly. Toast in a skillet over low heat for 2-3 minutes until golden and crisp. Let cool.
  4. Assemble Your Pudding: Spoon chia pudding into serving glasses. Layer the cinnamon apple filling over the pudding, followed by the oat crumble topping. Serve immediately or store in the fridge.

Notes

  • Use any milk of your choice, such as coconut, oat, soy, or regular milk.
  • Add an extra drizzle of maple syrup before serving if you prefer it sweeter.
  • For best texture, keep the crumble topping separate until ready to eat.
