Easy Zesty Lemon Herb Quinoa Salad to Freshen Up Your Meals


Ingredients

Scale
  • 1 cup Quinoa (Rinse well before cooking)
  • 2 cups Water or Broth (Use broth for added flavor)
  • 1 tsp Salt
  • 1/4 cup Fresh Lemon Juice (Provides zesty brightness)
  • 3 Tbsp Olive Oil (Extra virgin preferred)
  • 1 tsp Garlic (Minced)
  • 1 tsp Honey or Maple Syrup
  • 1/4 cup Fresh Parsley (Finely chopped)
  • 2 Tbsp Fresh Mint (Finely chopped)
  • 2 Tbsp Green Onions (Thinly sliced)
  • 1/2 medium Cucumber (Cubed)
  • 1 cup Cherry Tomatoes (Halved, optional)

Instructions

  1. Rinse quinoa under cold water until it runs clear.
  2. Bring rinsed quinoa and water or broth to a boil.
  3. Reduce to a simmer for about 15 minutes until tender and liquid is absorbed.
  4. Remove from heat, cover, and let rest for 5 minutes. Fluff with a fork and allow to cool slightly.
  5. In a small bowl, whisk together lemon juice, olive oil, garlic, and honey until emulsified.
  6. Finely chop parsley and mint, slice green onions, cube cucumber, and halve cherry tomatoes.
  7. In a large bowl, toss cooled quinoa with dressing and herb-veggie mix until well combined.
  8. Refrigerate for at least 30 minutes before serving.
