Easy Zesty Lemon Herb Quinoa Salad to Freshen Up Your Meals
Ingredients

- 1 cup Quinoa (Rinse well before cooking)
- 2 cups Water or Broth (Use broth for added flavor)
- 1 tsp Salt
- 1/4 cup Fresh Lemon Juice (Provides zesty brightness)
- 3 Tbsp Olive Oil (Extra virgin preferred)
- 1 tsp Garlic (Minced)
- 1 tsp Honey or Maple Syrup
- 1/4 cup Fresh Parsley (Finely chopped)
- 2 Tbsp Fresh Mint (Finely chopped)
- 2 Tbsp Green Onions (Thinly sliced)
- 1/2 medium Cucumber (Cubed)
- 1 cup Cherry Tomatoes (Halved, optional)
Instructions
- Rinse quinoa under cold water until it runs clear.
- Bring rinsed quinoa and water or broth to a boil.
- Reduce to a simmer for about 15 minutes until tender and liquid is absorbed.
- Remove from heat, cover, and let rest for 5 minutes. Fluff with a fork and allow to cool slightly.
- In a small bowl, whisk together lemon juice, olive oil, garlic, and honey until emulsified.
- Finely chop parsley and mint, slice green onions, cube cucumber, and halve cherry tomatoes.
- In a large bowl, toss cooled quinoa with dressing and herb-veggie mix until well combined.
- Refrigerate for at least 30 minutes before serving.
