Zesty Chipotle Lime Chicken Salad is a creamy, smoky, high-protein dish made with shredded chicken, fresh lime, and chipotle peppers in adobo.

- 4 cups cooked shredded chicken
- 1/2 cup finely diced red onion
- 1/2 cup diced celery (about 2 stalks)
- 1/4 cup chopped fresh cilantro
- 3/4 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 3 tablespoons fresh lime juice
- 2 tablespoons fresh lime zest
- 2 chipotle peppers in adobo sauce, finely chopped
- 3 tablespoons adobo sauce
- 2 garlic cloves, minced
- 3/4 teaspoon smoked paprika
- 3/4 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Place the shredded chicken in a large mixing bowl. Add the diced red onion, celery, and chopped cilantro. Gently toss to combine.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, chopped chipotle peppers, adobo sauce, minced garlic, smoked paprika, salt, and black pepper until smooth.
- Pour the dressing over the chicken mixture and stir until evenly coated.
- Taste and adjust seasoning as needed.
- Cover and refrigerate for at least 30 minutes before serving.
- Serve chilled with tortilla chips, in lettuce cups, as a sandwich filling, wrapped in tortillas, or over mixed greens.
