Description

Zesty Chipotle Lime Chicken Salad is a creamy, smoky, high-protein dish made with shredded chicken, fresh lime, and chipotle peppers in adobo.


Ingredients

  • 4 cups cooked shredded chicken
  • 1/2 cup finely diced red onion
  • 1/2 cup diced celery (about 2 stalks)
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons fresh lime juice
  • 2 tablespoons fresh lime zest
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 3 tablespoons adobo sauce
  • 2 garlic cloves, minced
  • 3/4 teaspoon smoked paprika
  • 3/4 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Place the shredded chicken in a large mixing bowl. Add the diced red onion, celery, and chopped cilantro. Gently toss to combine.
  2. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, chopped chipotle peppers, adobo sauce, minced garlic, smoked paprika, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Taste and adjust seasoning as needed.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Serve chilled with tortilla chips, in lettuce cups, as a sandwich filling, wrapped in tortillas, or over mixed greens.
