Instructions

  1. Drizzle olive oil into a nonstick pan over medium heat. Warm until shimmering, about 1 minute.
  2. Toss in diced bell peppers and red onion. Season with salt, pepper, and garlic powder, stirring occasionally until softened and slightly golden, about 3–4 minutes.
  3. Stir in baby spinach and halved cherry tomatoes. Cook until spinach wilts and tomatoes soften, about 1 minute.
  4. Lay a flour tortilla flat. Sprinkle shredded cheddar over the center, then pile on the warm veggie mixture, distributing ingredients evenly.
  5. Fold the tortilla edges inward, creating a snug packet. Place seam-side down in the skillet and cook over medium-low until golden brown and cheese melts, about 2 minutes per side.
