A cozy and satisfying vegetarian shepherd’s pie filled with mushrooms, lentils, and topped with creamy mashed potatoes.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups mushrooms, diced
- 1 carrot, diced
- 2 celery stalks, chopped
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1.5 cups cooked green lentils
- 1/2 cup vegetable broth
- 2 cups mashed potatoes
- Salt and pepper to taste
Instructions
- Sauté onions and garlic in olive oil until soft.
- Add mushrooms, carrots, and celery. Cook until tender.
- Stir in tomato paste, herbs, lentils, and broth. Simmer until thick.
- Transfer mixture to baking dish. Spread mashed potatoes on top.
- Bake at 375°F (190°C) for 25 minutes or until golden.
