Ingredients

  • 5 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup cocoa powder (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 1/4 cup milk or cream (for frosting)

Instructions

  1. Preheat oven to 350°F. Line a jelly roll pan with parchment and spray with nonstick spray.
  2. Beat egg yolks with sugar until pale and thick. In a separate bowl, whisk egg whites until stiff peaks form.
  3. Gently fold cocoa powder, flour, and salt into yolk mixture, then fold in egg whites until combined.
  4. Spread batter evenly into pan and bake for 12–15 minutes. Do not overbake.
  5. Immediately turn cake onto powdered sugar–dusted towel and roll while warm. Let cool completely.
  6. Whip heavy cream with powdered sugar and vanilla until stiff. Unroll cake and spread whipped cream inside. Reroll gently.
  7. Beat butter, cocoa powder, powdered sugar, vanilla, and milk for frosting until fluffy.
  8. Frost cake to resemble a log, creating texture with a fork. Decorate with optional sugared cranberries or mint.
  9. Refrigerate until ready to serve. Bring to room temperature before slicing.
