- 1 cup Milk (dairy or plant-based)
- 2 tbsp Maple Syrup or Honey
- 1 tsp Vanilla Extract
- 1 cup Fresh Strawberries
- 1 tsp Lemon Juice
- Optional Sweetener (pinch of sugar or honey)
- Toasted Nuts or Seeds (for garnish)
- Fresh Mint Leaves (for garnish)
- Additional Strawberries (sliced for topping)
Instructions
- In a medium bowl, whisk together chia seeds, milk, maple syrup, and vanilla until smooth.
- Cover and chill in the refrigerator for at least 4 hours or overnight until thick and creamy.
- In a small bowl, mash fresh strawberries with lemon juice until chunky and juicy. Sweeten to taste if needed.
- Spoon half of the chia pudding into jars or bowls, top with the strawberry mixture, and repeat layers.
- Garnish with toasted nuts or seeds and fresh mint leaves before serving.
Notes
- For extra creaminess, add a dollop of Greek yogurt.
- Use ripe, juicy strawberries for the best flavor and color.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Chia pudding can be frozen for up to 3 months; thaw in the fridge before serving.
