- 1/3 cup low-sodium soy sauce
- 1/3 cup pineapple juice
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 1 to 2 teaspoons chili garlic sauce
- 1 small shallot, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- Pinch of red pepper flakes
- 2 tablespoons olive oil
- 1/4 cup chopped fresh cilantro
- 1 tablespoon toasted sesame seeds
- 2 cups fresh pineapple chunks
- 1/2 small shallot, finely chopped
- 1 jalapeño, seeded if desired and finely chopped
- Juice of 1 lime
- 2 tablespoons fresh thyme leaves
- 1 avocado, diced
Instructions
- In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, chili garlic sauce, shallot, garlic, ginger, and red pepper flakes.
- Place chicken in a large bowl and pour one-third of the sauce over it. Toss to coat and marinate at least 15 minutes or up to 4 hours refrigerated. Reserve remaining sauce.
- In another bowl, combine pineapple chunks, shallot, jalapeño, lime juice, and thyme. Fold in avocado just before serving.
- Heat olive oil in a large skillet over medium-high heat.
- Add marinated chicken in a single layer and cook 4 to 5 minutes per side until golden and cooked through.
- Reduce heat to medium and pour in reserved sauce. Simmer 4 to 5 minutes until thickened and glossy.
- Remove from heat, stir in cilantro, and sprinkle with sesame seeds.
- Serve over warm rice topped with pineapple salsa.
