Description

Spicy Pineapple Glazed Chicken with Fresh Pineapple Salsa is a bold, sweet-heat dinner featuring caramelized chicken bites coated in a glossy pineapple glaze and topped with fresh pineapple, jalapeño, lime, and avocado salsa.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-size pieces
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 to 2 teaspoons chili garlic sauce
  • 1 small shallot, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • Pinch of red pepper flakes
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds
  • 2 cups fresh pineapple chunks
  • 1/2 small shallot, finely chopped
  • 1 jalapeño, seeded if desired and finely chopped
  • Juice of 1 lime
  • 2 tablespoons fresh thyme leaves
  • 1 avocado, diced

Instructions

  1. In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, chili garlic sauce, shallot, garlic, ginger, and red pepper flakes.
  2. Place chicken in a large bowl and pour one-third of the sauce over it. Toss to coat and marinate at least 15 minutes or up to 4 hours refrigerated. Reserve remaining sauce.
  3. In another bowl, combine pineapple chunks, shallot, jalapeño, lime juice, and thyme. Fold in avocado just before serving.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add marinated chicken in a single layer and cook 4 to 5 minutes per side until golden and cooked through.
  6. Reduce heat to medium and pour in reserved sauce. Simmer 4 to 5 minutes until thickened and glossy.
  7. Remove from heat, stir in cilantro, and sprinkle with sesame seeds.
  8. Serve over warm rice topped with pineapple salsa.
