Description
Sweet, spicy, and citrusy grilled chicken topped with a bright mojo sauce.

- 1 cup peach jam
- 1/4 cup Dijon mustard
- 1/4 cup fresh orange juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 small red onion, finely chopped
- 4 garlic cloves, minced
- 3 cups fresh orange juice
- 1/2 cup fresh lime juice
- 1/2 habanero chile, seeded and minced
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon vegetable oil
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper
Instructions
- In a bowl, whisk peach jam, mustard, orange juice, salt, and pepper.
- Heat oil in a saucepan, cook onion 5 minutes, add garlic 2 minutes.
- Add orange and lime juice and habanero; reduce by half. Thicken if needed.
- Stir in cilantro, cumin, salt, and pepper; set aside.
- Preheat grill to high. Reserve some glaze.
- Rub chicken with oil, salt, and pepper, then sear 5–6 minutes per side.
- Lower heat and brush with glaze repeatedly for 15 minutes.
- Cook to 145°F, rest 10 minutes, slice.
- Spoon citrus mojo over chicken and serve.
