Description

Spiced Turkey Stuffed Sweet Potatoes with Pepitas are a healthy Southwest-inspired dinner packed with lean protein, black beans, corn, melted cheese, and crunchy pumpkin seeds.


Ingredients

  • 8 medium sweet potatoes (about 8 ounces each), scrubbed
  • 1 1/2 tablespoons olive oil
  • 1 large poblano pepper, seeded and diced
  • 1 jalapeño, seeded and diced
  • 1 medium yellow onion, diced
  • 1 1/2 pounds lean ground turkey
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons kosher salt
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons chili powder
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen roasted corn
  • 2 tablespoons chopped fresh cilantro, plus extra for garnish
  • 1 cup shredded pepper jack cheese
  • 1/2 cup toasted pumpkin seeds (pepitas)
  • 1 cup plain Greek yogurt, for serving

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Pierce sweet potatoes with a fork and roast 50 to 60 minutes until fork-tender. Cool slightly.
  3. Heat olive oil in a skillet over medium heat. Cook poblano, jalapeño, and onion 6 to 8 minutes.
  4. Add ground turkey and garlic. Cook, breaking apart, then stir in salt, cumin, and chili powder. Cook until browned.
  5. Stir in black beans and corn. Heat through and remove from heat. Stir in cilantro.
  6. Slice sweet potatoes lengthwise and press ends to open.
  7. Fill each with turkey mixture and top with shredded cheese.
  8. Broil 2 to 3 minutes until cheese melts.
  9. Top with Greek yogurt, toasted pepitas, and extra cilantro before serving.
