Description
Spiced Turkey Stuffed Sweet Potatoes with Pepitas are a healthy Southwest-inspired dinner packed with lean protein, black beans, corn, melted cheese, and crunchy pumpkin seeds.

- 8 medium sweet potatoes (about 8 ounces each), scrubbed
- 1 1/2 tablespoons olive oil
- 1 large poblano pepper, seeded and diced
- 1 jalapeño, seeded and diced
- 1 medium yellow onion, diced
- 1 1/2 pounds lean ground turkey
- 4 cloves garlic, minced
- 1 1/2 teaspoons kosher salt
- 2 teaspoons ground cumin
- 1 1/2 teaspoons chili powder
- 1 cup canned black beans, rinsed and drained
- 1 cup frozen roasted corn
- 2 tablespoons chopped fresh cilantro, plus extra for garnish
- 1 cup shredded pepper jack cheese
- 1/2 cup toasted pumpkin seeds (pepitas)
- 1 cup plain Greek yogurt, for serving
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Pierce sweet potatoes with a fork and roast 50 to 60 minutes until fork-tender. Cool slightly.
- Heat olive oil in a skillet over medium heat. Cook poblano, jalapeño, and onion 6 to 8 minutes.
- Add ground turkey and garlic. Cook, breaking apart, then stir in salt, cumin, and chili powder. Cook until browned.
- Stir in black beans and corn. Heat through and remove from heat. Stir in cilantro.
- Slice sweet potatoes lengthwise and press ends to open.
- Fill each with turkey mixture and top with shredded cheese.
- Broil 2 to 3 minutes until cheese melts.
- Top with Greek yogurt, toasted pepitas, and extra cilantro before serving.
