Description

A bold and comforting Smoky Chipotle Beef Taco Casserole perfect for family dinners.


Ingredients

  • 1 pound Ground beef
  • 2 tablespoons Chipotle peppers in adobo sauce
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 tablespoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 8 tortillas Corn
  • 1 cup Shredded cheese
  • 1 can Refried beans
  • 1 cup Salsa
  • 0.5 cup Fresh cilantro, chopped
  • 1 cup Sour cream
  • 1 medium Avocado, diced or guacamole
  • 1 each Lime, cut into wedges

Instructions

  1. In a large skillet over medium-high heat, cook beef until no longer pink, about 5 minutes.
  2. Add chopped onion and minced garlic to the skillet, cooking until onion is translucent and garlic is fragrant, about 2 minutes.
  3. Mix in chopped chipotle peppers, adobo sauce, cumin, chili powder, salt, and pepper, coating the beef evenly.
  4. Pour in ¼ cup salsa or water, bring to a gentle simmer, then cook for 3–4 minutes until the mixture thickens slightly.
  5. Preheat to 375°F (190°C) and grease an 8×8-inch baking dish with cooking spray.
  6. Arrange a single layer of corn tortillas at the bottom of the dish.
  7. Spoon half of the refried beans over the tortilla layer.
  8. Dollop half of the beef mixture over the beans.
  9. Scatter ¾ cup shredded cheese and ½ cup salsa over the beef layer.
  10. Add another tortilla layer, beans, beef, salsa, and cheese, finishing with a final sprinkle of cheese.
  11. Place the dish in the oven and bake for 20–25 minutes until cheese is bubbly.
  12. Let casserole sit for 5 minutes before serving.
