A bold and comforting Smoky Chipotle Beef Taco Casserole perfect for family dinners.

- 1 pound Ground beef
- 2 tablespoons Chipotle peppers in adobo sauce
- 1 medium Onion, finely chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ground cumin
- 1 tablespoon Chili powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 8 tortillas Corn
- 1 cup Shredded cheese
- 1 can Refried beans
- 1 cup Salsa
- 0.5 cup Fresh cilantro, chopped
- 1 cup Sour cream
- 1 medium Avocado, diced or guacamole
- 1 each Lime, cut into wedges
Instructions
- In a large skillet over medium-high heat, cook beef until no longer pink, about 5 minutes.
- Add chopped onion and minced garlic to the skillet, cooking until onion is translucent and garlic is fragrant, about 2 minutes.
- Mix in chopped chipotle peppers, adobo sauce, cumin, chili powder, salt, and pepper, coating the beef evenly.
- Pour in ¼ cup salsa or water, bring to a gentle simmer, then cook for 3–4 minutes until the mixture thickens slightly.
- Preheat to 375°F (190°C) and grease an 8×8-inch baking dish with cooking spray.
- Arrange a single layer of corn tortillas at the bottom of the dish.
- Spoon half of the refried beans over the tortilla layer.
- Dollop half of the beef mixture over the beans.
- Scatter ¾ cup shredded cheese and ½ cup salsa over the beef layer.
- Add another tortilla layer, beans, beef, salsa, and cheese, finishing with a final sprinkle of cheese.
- Place the dish in the oven and bake for 20–25 minutes until cheese is bubbly.
- Let casserole sit for 5 minutes before serving.
