Slow-braised beef short ribs cooked until tender in a deeply spiced coconut mushroom sauce.
Ingredients

- 3 medium yellow onions, chopped
- 5 cloves garlic
- 2-inch fresh ginger
- 5 red chilies
- 2 stalks lemongrass
- 1 tbsp coriander
- 1 tbsp cumin
- 2 tsp turmeric
- 1/2 tsp cardamom
- 2 tbsp oil
- 4 lb beef short ribs
- 2 tsp salt
- 2 1/2 cups coconut milk
- 2 tbsp tamarind paste
- 2 tsp brown sugar
- 3 kaffir lime leaves
- 1/3 cup nut butter
- 2 cups mushrooms
Instructions
- Blend spice paste ingredients
- Cook paste until fragrant
- Add mushrooms and soften
- Add beef and coconut milk
- Braise until tender
- Finish sauce and serve
