Description

Slow-braised beef short ribs cooked until tender in a deeply spiced coconut mushroom sauce.


Ingredients

Scale
  • 3 medium yellow onions, chopped
  • 5 cloves garlic
  • 2-inch fresh ginger
  • 5 red chilies
  • 2 stalks lemongrass
  • 1 tbsp coriander
  • 1 tbsp cumin
  • 2 tsp turmeric
  • 1/2 tsp cardamom
  • 2 tbsp oil
  • 4 lb beef short ribs
  • 2 tsp salt
  • 2 1/2 cups coconut milk
  • 2 tbsp tamarind paste
  • 2 tsp brown sugar
  • 3 kaffir lime leaves
  • 1/3 cup nut butter
  • 2 cups mushrooms

Instructions

  1. Blend spice paste ingredients
  2. Cook paste until fragrant
  3. Add mushrooms and soften
  4. Add beef and coconut milk
  5. Braise until tender
  6. Finish sauce and serve
