- 4 pieces bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 2 pieces lemon wedges
Instructions
- Preheat your oven to 425°F (218°C) and position the rack in the middle.
- Mix olive oil, garlic, rosemary, thyme, lemon zest, salt, and pepper in a bowl until smooth.
- Rub the herb blend all over and under the skin of the chicken thighs; chill in the fridge for at least 15 minutes.
- Place thighs skin-side up on a parchment-lined baking sheet; bake for 35–40 minutes until skin is golden brown and internal temperature reaches 165°F.
- Transfer the chicken to a serving platter and let rest for 5 minutes; sprinkle with parsley and squeeze lemon wedges over the top.
