- 1 tablespoon soy sauce
- ½ teaspoon maple syrup
- 1 tablespoon + ¼ teaspoon cornstarch
- 1 tablespoon + ¼ teaspoon cold water
Instructions
- Preheat oven to 400°F (204°C). Leave garlic cloves unpeeled, coat lightly in oil, and place on a parchment-lined baking sheet. Roast until golden brown, about 10-20 minutes depending on size. Peel cooled garlic and remove hard nubs.
- Scrub potatoes clean. Place potatoes, bay leaves, and enough water to cover in a large pot. Season with salt. Boil over medium-high heat for 30-40 minutes, or until tender when pierced with a knife. Drain. For easier peeling, make a circular slit, soak in cold water, then peel.
- In a large bowl, mash the boiled potatoes with the roasted garlic, warm milk, and butter until creamy. Season with salt to taste.
- If using, remove sausage from casings and break into small pieces. Cook in a skillet over medium-high heat until browned and cooked through. Remove sausage, leaving drippings in the pan.
- In the same skillet with sausage drippings, cook the sliced onion over medium-low heat until brown and soft, about 15 minutes. Add beef stock, dark beer, and soy sauce. Simmer for 5-10 minutes, scraping up any browned bits.
- In a small bowl, mix cornstarch and cold water to create a slurry. Pour into the simmering gravy, stirring constantly until thickened. Stir in maple syrup.
- Layer mashed potatoes in serving bowls. Top with cooked sausage and generously ladle the gravy over the top.
