Description

Classic Quiche with Turkey Bacon, Cheddar, Swiss, and Fresh Thyme features a flaky crust, creamy egg custard, smoky turkey bacon, and a blend of sharp and nutty cheeses. Perfect for brunch or dinner.


Ingredients

  • 1 (9-inch) pie crust, homemade or store-bought
  • 1/2 pound turkey bacon, chopped into 1/2-inch pieces
  • 1/2 medium yellow onion, diced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Swiss cheese
  • 1 tablespoon fresh thyme leaves
  • 1 3/4 cups half-and-half (or 3/4 cup whole milk plus 1 cup heavy cream)
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon ground nutmeg
  • 1 egg white, lightly beaten
  • 1 tablespoon chopped fresh parsley or chives (optional)

Instructions

  1. Preheat oven to 350°F. Press crust into pie dish and freeze 20 to 30 minutes.
  2. Prick crust, line with parchment and weights, and bake 35 to 40 minutes. Remove weights.
  3. Brush crust with egg white and bake 3 to 5 minutes more.
  4. Cook turkey bacon until crisp. Sauté onion until soft.
  5. Whisk eggs, half-and-half, salt, pepper, paprika, and nutmeg.
  6. Stir in cheeses, thyme, bacon, and onion.
  7. Pour filling into crust and bake 45 to 50 minutes until set.
  8. Rest 10 to 15 minutes before slicing. Garnish if desired.

  • Serve warm or at room temperature.
  • Can be made a day in advance and reheated.
