Description
Classic Quiche with Turkey Bacon, Cheddar, Swiss, and Fresh Thyme features a flaky crust, creamy egg custard, smoky turkey bacon, and a blend of sharp and nutty cheeses. Perfect for brunch or dinner.

- 1 (9-inch) pie crust, homemade or store-bought
- 1/2 pound turkey bacon, chopped into 1/2-inch pieces
- 1/2 medium yellow onion, diced
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Swiss cheese
- 1 tablespoon fresh thyme leaves
- 1 3/4 cups half-and-half (or 3/4 cup whole milk plus 1 cup heavy cream)
- 4 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon ground nutmeg
- 1 egg white, lightly beaten
- 1 tablespoon chopped fresh parsley or chives (optional)
Instructions
- Preheat oven to 350°F. Press crust into pie dish and freeze 20 to 30 minutes.
- Prick crust, line with parchment and weights, and bake 35 to 40 minutes. Remove weights.
- Brush crust with egg white and bake 3 to 5 minutes more.
- Cook turkey bacon until crisp. Sauté onion until soft.
- Whisk eggs, half-and-half, salt, pepper, paprika, and nutmeg.
- Stir in cheeses, thyme, bacon, and onion.
- Pour filling into crust and bake 45 to 50 minutes until set.
- Rest 10 to 15 minutes before slicing. Garnish if desired.
Notes
- Serve warm or at room temperature.
- Can be made a day in advance and reheated.
- Add more herbs for extra flavor.
