Ingredients

  • 1/4 cup Chia seeds (soak up the coconut milk)
  • 1 cup Coconut milk (full-fat for richness)
  • 2 tablespoons Maple syrup (adds sweetness)
  • 1 cup Fresh pineapple (diced)
  • 2 tablespoons Pineapple juice (optional)
  • 1/4 cup Toasted shredded coconut
  • 1/4 cup Chopped nuts (like macadamia or almonds)
  • 1/4 cup Fresh mint leaves (to garnish)

Instructions

  1. Combine chia seeds, coconut milk, and maple syrup in a bowl. Whisk until mixed. Let rest for 5 minutes, then whisk again.
  2. Cover and chill chia mixture for at least 2 hours or overnight until thick and creamy.
  3. Toss diced pineapple with optional pineapple juice to coat.
  4. Layer half the chia pudding into serving jars, add pineapple mix, then top with remaining pudding.
  5. Sprinkle toppings over each jar just before serving.
