- 1/4 cup Chia seeds (soak up the coconut milk)
- 1 cup Coconut milk (full-fat for richness)
- 2 tablespoons Maple syrup (adds sweetness)
- 1 cup Fresh pineapple (diced)
- 2 tablespoons Pineapple juice (optional)
- 1/4 cup Toasted shredded coconut
- 1/4 cup Chopped nuts (like macadamia or almonds)
- 1/4 cup Fresh mint leaves (to garnish)
Instructions
- Combine chia seeds, coconut milk, and maple syrup in a bowl. Whisk until mixed. Let rest for 5 minutes, then whisk again.
- Cover and chill chia mixture for at least 2 hours or overnight until thick and creamy.
- Toss diced pineapple with optional pineapple juice to coat.
- Layer half the chia pudding into serving jars, add pineapple mix, then top with remaining pudding.
- Sprinkle toppings over each jar just before serving.
