Ingredients

  • 8 oz Pasta (e.g., penne or fusilli)
  • 8 oz Fresh mushrooms (Button, cremini, or shiitake)
  • 2 cloves Garlic (minced)
  • 1 cup Heavy cream
  • 4 cups Vegetable or chicken broth
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tbsp Olive oil or butter
  • 1 tbsp Fresh thyme or parsley (chopped)
  • to taste Salt and pepper

Instructions

  1. Warm oil in a large pot over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Add sliced mushrooms and continue cooking for about 5 minutes, stirring occasionally.
  3. Pour in vegetable broth and heavy cream, gently stirring to combine. Bring to a gentle simmer.
  4. Sprinkle salt, pepper, and thyme into the sauce. Stir gently to distribute flavors.
  5. Stir in pasta, pressing down beneath the liquid. Simmer uncovered for 10-12 minutes until al dente.
  6. Remove from heat and stir in grated Parmesan cheese until melted and silky.
  7. Transfer to bowls and sprinkle with chopped parsley or extra thyme leaves before serving.
