Ingredients

- 8 oz Pasta (e.g., penne or fusilli)
- 8 oz Fresh mushrooms (Button, cremini, or shiitake)
- 2 cloves Garlic (minced)
- 1 cup Heavy cream
- 4 cups Vegetable or chicken broth
- 1/2 cup Parmesan cheese (freshly grated)
- 2 tbsp Olive oil or butter
- 1 tbsp Fresh thyme or parsley (chopped)
- to taste Salt and pepper
Instructions
- Warm oil in a large pot over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add sliced mushrooms and continue cooking for about 5 minutes, stirring occasionally.
- Pour in vegetable broth and heavy cream, gently stirring to combine. Bring to a gentle simmer.
- Sprinkle salt, pepper, and thyme into the sauce. Stir gently to distribute flavors.
- Stir in pasta, pressing down beneath the liquid. Simmer uncovered for 10-12 minutes until al dente.
- Remove from heat and stir in grated Parmesan cheese until melted and silky.
- Transfer to bowls and sprinkle with chopped parsley or extra thyme leaves before serving.
