- 2 green onions, chopped
- 1/2 tsp garlic powder
- 2 eggs
- 1/4 cup flour
- 1 cup panko breadcrumbs
- Oil for frying
- Salt and pepper to taste
Instructions
- Combine mashed potatoes, cheese, bacon, onions, garlic powder, one egg, salt, and pepper.
- Shape into 1-inch balls and chill for 15 minutes.
- Set up breading stations: flour, beaten egg, breadcrumbs.
- Roll each ball in flour, egg, and breadcrumbs.
- Fry at 350°F for 2–3 minutes until golden or bake at 425°F for 20 minutes.
- Serve warm with dipping sauces like sour cream or ranch.
